The birth of Kaze no Mori

Kaze no Mori was launched in 1998 out of an aspiration to make freshly pressed namazake (unpasteurized sake), crafted from homegrown Akitsuho rice, available to the local people.

The name is derived from the "Kaze no Mori tōge", a mountain pass located in Gose city. Set amid the lush foothills of Mt. Katsuragi, gentle winds sweep through the pass year-round.

What kind of sake do we aim to create with Kaze no Mori?
When it comes to flavour, there isn't any complicated theory or elaborate explanation. We simply want to craft a sake that, with just one sip, instinctively makes you think, "I want to drink this again".

A memorable introduction to Japanese sake, nothing would delight us more than if Kaze no Mori were the reason you came to love Japanese sake.

And yet, there is a reason and purpose behind the flavour.

Tradition and innovation

At Yucho Shuzo, guided by our mission of "Preserving Japan's beauty a 100 years beyond – through the art of sake brewing", we continue to explore the history of Nara's sake to an unprecedented depth. Through the actual brewing of mizuhana using traditional methods, we have gained knowledge and insight, into such as techniques as bodaimoto and soyashi-mizu, which we weave into the brewing of Kaze no Mori.

At the same time, we embrace cutting-edge techniques only possible today – proprietary fermentation tanks, novel raw-material processing methods, and more.
By layering old and new techniques on top of the ingredients, and their fascinating attributes, in a mille-feuille style of multi-layering, we create the inimitable taste of "Kaze no Mori".

The promises of "Kaze no Mori"

"A dedication to unfiltered namazake."

Bringing the taste of freshly pressed sake to our customers is an important dedication of ours and we have for over 25 years specialized in unfiltered, unpasteurized namazake – eschewing filtration and water addition after pressing. The rich, smooth, thick texture and subtle changes in flavour over time are the greatest attractions of namazake. For this reason, we remain dedicated to brewing Kaze no Mori as an unfiltered, unpasteurized namazake.

At the same time, because Kaze no Mori is an unpasteurized sake, maintaining stable quality presents certain challenges.
For this reason, Kaze no Mori is handled exclusively by a select group of partner retailers who practise strict quality control and are able to communicate the unique characteristics of Kaze no Mori to customers. Moreover, owing to a limited production, Kaze no Mori is only available in 720 ml bottles in hopes of reaching as many customers as possible. We thank you for your understanding.

Two ways to enjoy Kaze no Mori

Immediately after opening, Kaze no Mori may contain naturally dissolved carbon dioxide produced during moromi fermentation. When sipped, this gentle effervescence imparts a soft, popping freshness on the palate.

As the sake is enjoyed over time, and after several days, the natural carbon dioxide felt upon opening will dissipate. What is then revealed is the full expression of Kaze no Mori – the rich flavour, umami, and sweetness derived from the rice, and fruit-like aroma and acidity created by the yeast.

The carbon dioxide is merely a by-product of fermentation. While it remains, it can sometimes make it difficult to appreciate the sake's true character. We invite you to take your time and enjoy Kaze no Mori once the natural carbonation has settled.

Kaze no MoriKaze no Mori

Kaze no Mori expresses differences in flavour that arise from rice variety and polishing ratio.
Roughly eighty percent of our production uses representative Nara-grown rice varieties – Akitsuho, Tsuyuhakaze, and Nanatsuyu – while the remaining twenty percent is brewed using Yamada Nishiki and Aiyama from Hyōgo Prefecture, and Omachi from Okayama Prefecture.

    Akitsuho 657 is a long-running bestseller in the Kaze no Mori range. With aromas reminiscent of melon and pear, and a palate where sweetness and complexity coexist, this brew is quintessential Kaze no Mori.

    Akitsuho rice, a table rice generally considered to have poor solubility, is thoroughly solubilized during fermentation. The characteristic flavour elements of Akitsuho – sweetness, acidity, and complexity – find balance in this sake, resulting in a full-bodied taste possible only with a low degree of polishing.

In the Kaze no Mori ALPHA series, we set goals that go beyond the traditional boundaries of Kaze no Mori, combining Nara's traditional bodaimoto method with original techniques to pursue new possibilities in sake brewing.

Since the 2022 brewing year, all production employs bodaimoto.

    Akitsuho rice can withstand high levels of polishing, and making use of this trait, we mill it down to 22%. As polishing advances, the more compact the grain's character becomes, allowing the personality of the brewing water, the largest component of sake, to come to the fore.

    In this brew, you can clearly sense the mineral-rich texture of the deep underground water from the Katsuragi mountain range, a defining element of Kaze no Mori – a fresh, mineral-rich clarity that is fully revealed only at the "Height of Refinement".

    Sleep Separation® is an innovative proprietary technique for separating the sake from the lees.
    Without the use of any equipment except the fermentation tank (without a pressing machine, centrifuge, filters, etc.), the sake is separated from the mash free from exposure to oxygen, pressure, filter materials, metal, or plastic.

    As a result, the sake obtained through this technique is precisely equal to the liquid portion of the mash itself, and of exceptional clarity: a Kaze no Mori brew of truly immaculate quality.

    The unique novelty of this technique inspired the title "A New Hope".

    As a rule, Kaze no Mori is brewed using the sake yeast, Kyokai No. 7.
    In this brew, however, we step outside this rule, using Kyokai No. 6, considered to be the progenitor of modern sake yeasts. This is also the only Kaze no Mori to employ white koji.

    In developing this sake, we learned about Kyokai No. 6 from Yusuke Sato of Aramasa Shuzo, a brewer with whom we have shared a close relationship for over a decade – and whose brewery is located at the site where yeast No. 6 was originally discovered.
    This exchange also inspired us to make white koji.
