From the beginnings of "Kaze no Mori", Akitsuho rice has been, and remains, at the heart of our journey as a brewery.
The Katsuragi Sanroku Brewhouse, also called the "Sanroku-gura", is situated amid the very fields in which Akitsuho rice is grown.
At roughly 400 metres above sea level, this land lies beyond the reach of irrigation systems, and so the rice here is cultivated exclusively using natural spring water that flows out from the surrounding mountains. These conditions create an exceptional environment for growing high-quality Akitsuho rice.
However, the satoyama* of this region now faces serious challenges. As farming communities age, successors are scarce, and with low agricultural productivity, areas of abandoned farmland have begun to appear in recent years, raising concerns about the long-term sustainability of this land.
We established the Sanroku-gura brewhouse in 2024 out of a desire to draw upon the potential of sake to address these challenges. By creating the Kaze no Mori Satoyama Community, in which farmers, brewers, retailers, and consumers coexist and support one another, we aim to realize our vision of
"Bridging the satoyama to the next century".
*Satoyama are countryside communities in Japan that live in
sustainable harmony with nearby forests and mountains.

The Beginnings of S Kaze no Mori

At the Sanroku-gura, located at the heart of these beautiful terraced rice fields, the brewers themselves live and work in harmony with the satoyama ecosystem. They hone their senses while crafting the new "S Kaze no Mori" series. Crafted from Akitsuho rice born of the same land, the "S Kaze no Mori" series captures the true essence and character of the satoyama terroir.

Sake Sustainability Rating and Three Commitments
With "S Kaze no Mori" we propose a new value standard for sake,
the "Sake Sustainability Rating".
Furthermore, we shall continue to brew sake guided by the 3 commitments of the Sanroku-gura:
1. Use Akitsuho rice grown at the foothills of Mt Katsuragi.
2. Polish the rice only to a level comparable to table rice.
3. Employ traditional Nara sake-brewing techniques.

Characteristics of the Nishi District
In the Nishi District, Akitsuho rice is cultivated primarily by Mr. Sugiura. Some of the rice fields in this area were among the earliest to transition to farming without the use of pesticides or chemical fertilizers.
Around the Sanroku-gura, this district sits at the highest elevation – over 400 metres above sea level. Surrounded by forest, it receives limited sunlight, and with each rice paddy being small in size, productivity here is extremely challenging.
However, this environment yields exceptional Akitsuho rice capable of expressing a uniquely clear and transparent character.
